Hen Skewers

  • 1/2 cup teriyaki sauce (gluten-free, if wanted)
  • 1 Tbsp minced recent ginger
  • 1 garlic clove, minced
  • 2 lbs boneless, skinless hen breast, reduce into skinny strips

  • 1 garlic clove, minced

  • 1 Tbsp lime juice
  • 1 Tbsp chopped recent cilantro
  • 1 Tbsp chopped peanuts
  • 1 cup thinly sliced carrots
  • 1 cup thinly sliced celery


In a medium bowl, pour the teriyaki sauce over the hen. Add the ginger and half the garlic to the bowl and stir to mix. Marinate, coated and refrigerated, for a minimum of 1 hour.

In a small bowl, whisk the peanut butter and coconut milk. Add the sesame oil, soy sauce, lime juice, and remaining garlic to the bowl and whisk to mix. Prime with cilantro and peanuts.

Preheat grill to medium-high. Thread the hen onto 16 skewers. Grill the hen for 3 minutes on either side, or till cooked by. Serve with dipping sauce, carrots, and celery.
